Apple Beet Crisp

What to do

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together oat flour, oats, brown sugar, cinnamon, and salt. Pour in the melted butter and use a fork to mix until a “dough” form and there are no clumps of flour. Place in the fridge.
  3. In a small saucepan over medium high heat, place 2 tbsp butter, sliced apples, cinnamon, maple syrup, lemon juice, ginger, vanilla, and pinch of salt and gently mix together. Stir occasionally as it cooks.
  1. Once the apples are cooking and juices have begun to collect in the bottom of the pan, sprinkle in the cornstarch and continually stir until the liquid becomes thick and syrupy, coating the apples. Add in the diced beets and gently stir until fully incorporated.
  2. Pour the filling into a 9 inch cast iron skillet or 8×8 pan. Remove the topping from the fridge. Crumble evenly over top of the filling.
  3. Place in the oven and bake for 25- 35 minutes, until the crisp is slightly browned on top. Allow to cool for 15 minutes before serving. Top with ice cream of choice and enjoy!

Filling:
5 Granny Smith apples, sliced
1 package Love Beets Organic Cooked Beets
1⁄4 maple syrup
2 tsp vanilla extract
2 tsp cinnamon
1 tbsp cornstarch
Juice of 1 lemon
2 tsp freshly grated ginger (optional)
2 tbsp butter or vegan butter
Pinch of salt

Topping:
1 cup oat flour
3⁄4 cup oats
1⁄3 cup brown sugar
1⁄2 tsp cinnamon
6 tbsp butter, melted
Pinch of salt
