What to do
- Preheat oven to 375°F with a baking sheet inside.
- In a large pan over medium heat, heat the olive oil. Add the onions and cook for 10 minutes, stirring occasionally. Stir in the brown sugar and continue cooking for another 15-20 minutes, stirring every few minutes, until the onions are cooked through and caramelized. Remove from heat and set aside.
- Carefully lay the flatbreads out the preheated baking sheet. Spread the feta cheese evenly between the two flatbreads. Add the caramelized onions on top, top with the beets and half the fresh thyme.
- Return the baking sheet with the flatbreads to the oven and bake until the feta cheese is softened,and flatbread is crispy, 8 to 10 minutes. Sprinkle with additional feta cheese and fresh thyme. Cut into 8 small wedges or strips
