Beet Hummus two ways

What to do

Regular Beet Hummus:

  1. Drain and rinse chickpeas.  
  2. Add all ingredients except olive oil to food processor or high speed blender.
  3. Blend to combine, then slowly stream in oil and continue blending until smooth and creamy.
  4. Taste and adjust seasoning as desired. 

Golden Beet Hummus:

  1. Drain and rinse chickpeas.  
  2. Add all ingredients except olive oil and chickpea liquid to food processor or high speed blender.
  3. Blend to combine, then slowly stream in oil and continue blending until smooth and creamy.
  4. Add 2-3 tbsp chickpea liquid if needed for texture.
  5. Taste and adjust seasoning as desired. 

 

What you’ll Need

Regular beet hummus:  

1 15.oz can chickpeas 

3 cloves garlic (roasted or fresh) 

1 cup Love Beets Organic Cooked Beets, diced 

1/3 cup tbsp tahini  

3 tbsp lemon juice 

1/4 cup olive oil 

1 tsp cumin 

1 tsp fine kosher salt 

1/2 tsp paprika 

1 tbsp Love Beets beet juice  

 

Golden beet hummus:  

1 15.oz can chickpeas (reserve ¼ of liquid from can) 

3 cloves roasted garlic 

1 package of Love Beets Honey + Vinegar Golden Beets 

1/3 cup tbsp tahini  

2 tbsp lemon juice 

1/4 cup olive oil 

1 1/2 tsp ground turmeric 

1 1/2 tsp fine kosher salt 

1 tsp cumin 

1/2 tsp paprika 

⅛-¼  tsp cayenne pepper or a dash of sriracha  

2-3 tbsp liquid from can of chickpeas
