Best with Organic Beet Juice

Beet Mac & Cheese (Vegan)

Prep Time: 2 hours (cashew soaking time) // Cook Time: 20 minutes Servings: 4

What to do

Soak cashews in room temp water for 2 hours. Drain and rinse.

Cook pasta according to package directions.

Add to blender with beet juice, nutritional yeast, lemon juice, salt, pepper and olive oil. Blend until smooth and creamy. Toss cooked pasta in sauce and garnish with fresh herbs.

What you’ll Need

12 oz macaroni (or pasta of choice), cooked according to package directions

1 cup raw, unsalted cashews, soaked in room temp water for 2 hours

¾ cup Love Beets Beet Juice

2 tbsp nutritional yeast

1 1/2 tbsp lemon juice

3/4 tsp fine sea salt

1/2 tsp cracked black pepper

1-2 tbsp olive oil for consistency
