Citrus, Beet, & Baby Kale Salad

What to do

  1. Wash and pat dry the baby kale; place in a large salad bowl.
  2. Peel and section the blood orange and grapefruit.
  3. Roughly chop the walnuts and beets.
  4. Combine all ingredients with the kale, sprinkling the gorgonzola intermittently.
  5. Drizzle with beet & sage balsamic vinaigrette and toss until well-coated.

1 ripe grapefruit

1/4 cup gorgonzola cheese
