What to do
The ever-lovely Dani Nemeh hooked us up with this recipe for festive, peppermint brownies! The best part? They’re PACKED with protein, fiber, and are so fudgy there’s no way you’ll eat just one.
- Preheat oven to 375°F and line a brownie pan with parchment.
- Blend together beets, oats, chocolate protein, cacao, coconut oil, maple syrup, black beans, vanilla extract, peppermint extract, and baking powder.
- Bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
- While the brownies are still warm, break the peppermint chocolate bar over top so that the chocolate can melt over the top.
- Slice and enjoy!
What you’ll Need
1/2 cup Love Beets Organic Cooked Beets
1 1/2 cup rolled oats
1/2 cup chocolate protein powder (we used Ka’Chava)
1/4 cup cacao or high quality cocoa powder
1/4 cup melted coconut oil (we used Nature’s Approved peppermint coconut oil)
1/4 maple syrup
1/2 can black beans (drained and rinsed)
1/2 tsp vanilla extract
1/2 tsp peppermint extract
1 tsp baking powder
Peppermint Stick Chocolate Bar (we used Theo)
