Golden Beet Salad (AHA Certified)

What to do

  1. In a large bowl, add the greens, beets, celery, half of the almonds, and half of the feta.
  2. In a small bowl, mix together the olive oil, red wine vinegar, lemon juice, honey, salt (optional) and pepper. Whisk until well combined and completely emulsified.
  3. Pour desired amount of dressing into large bowl with salad ingredients. Toss to combine all ingredients, then top with remaining almonds and feta cheese.
  4. Enjoy!

  • 4 cups mixed greens

  • 2 stalks celery, diced

For the dressing:

  • ¼ cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • Juice of half a fresh lemon
  • 1 Tbsp honey
  • ½ tsp black pepper
  • Pinch of salt, optional
