What to do
Make the Dressing:
- In a small bowl, whisk together the sherry vinegar, mustard, olive oil, honey, garlic, salt and a few grinds of pepper. Use immediately and discard the garlic before serving, or store in the refrigerator for up to 1 week.
Serve the Salad:
- In a medium bowl, combine the spinach, beets, blueberries, red onion, half of the goat cheese, almonds, and dill. Pour over the dressing and toss gently to coat. Transfer the salad to two plates, top with extra goat cheese, and season with black pepper. Enjoy!

2 tbsp sherry vinegar
1 tsp Dijon mustard
¼ cup extra-virgin olive oil
½ tsp honey
1 garlic clove, crushed
¼ tsp sea salt
Freshly ground black pepper
Salad
4 cups baby spinach
1 (6.5oz) package Love Beets Honey Vinegar Golden Beets
½ cup blueberries
¼ cup thinly sliced red onion
2 oz. crumbled goat cheese
3 tbsp whole almonds
1 tbsp chopped dill
