What to do
- Preheat oven to 375°F.
- Add all of the ingredients for the braised beets to a small casserole dish. Stir well, cover with foil, and bake on the center rack for 15 to 20 minutes, or until red wine is very fragrant.
- Add the olive oil and spinach to a medium-sized skillet, cover, and heat to medium.
- Cook, stirring occasionally, until spinach has wilted (3-5 minutes).
- Serve beets over spinach with goat cheese, pumpkin seeds, and cracked black pepper.
