Roasted Carrots & Brussels Sprouts with Golden Beets, Lentils, and Herbed Yogurt

What to do

  1. Cook lentils according to package instructions.
  2. Preheat the oven to 400 degrees F.
  3. Spread the carrots and brussels sprouts on a large baking sheet. Drizzle with avocado oil and sprinkle with sea salt. Use your hands to toss everything together until vegetables are well-coated with oil.
  4. Bake on the center rack of the pre-heated oven 30 minutes, or until vegetables reach desired level of done-ness.
  5. Stir together the ingredients for the herbed yogurt.
  6. Transfer herbed yogurt to a platter (or serving bowl) and smooth into an even layer. Arrange the cooked lentils, roasted vegetables, golden beets, pistachios and parsley on top. Serve and enjoy!

1 cup green lentils

1 Tbsp avocado oil or olive oil

1 bunch heirloom carrots

2 cups Brussels sprouts, halved

¼ tsp sea salt, to taste

1 (6.5-oz) package Love Beets Honey & Vinegar Golden Beets

¼ cup pistachios

2 Tbsp fresh parsley, chopped

For the Herbed Yogurt: 

1 cup plain Greek yogurt

2 tsp dried dill

¼ tsp sea salt, to taste
