What to do
- Make the dressing: Combine all ingredients in a mixing bowl and set aside.
- Make the Tartare: Dice the avocado and toss with the lime juice and set aside. Spiralize the cucumber into thin noodles and set aside. Build a tartare stack by packing the avocado, diced golden beets, spiralized cucumber, and diced red beets into a tall biscuit cutter or circle cookie cutter set over a serving board or plate. You may also reverse the ingredients into a shallow ramekin or cup and invert it onto a plate. Repeat with remaining ingredients if creating a few more.
- To Serve: Pour some of the dressing over each tartare and garnish with micro greens, flowers, and sesame seeds. Serve alongside seeded crackers, if desired. Best enjoyed within two days.

1 (6.5oz) package Love Beets Organic Mild Vinegar Beets, diced
