Simple Beet, Pear & Feta Salad (AHA CERTIFIED)

What to do

  1. In a non-stick skillet, toast the walnuts over medium-high heat for 5 minutes, stirring occasionally. Remove from heat and set aside.
  2. In a large bowl, add the arugula, beets, pear, half of the walnuts, and half of the feta.
  3. In a small bowl, mix together the olive oil, balsamic vinegar, mustard, and pepper. Whisk until well combined and completely emulsified.
  4. Pour desired amount of dressing into large bowl with salad ingredients. Toss to combine all ingredients, then top with remaining walnuts and feta cheese.
  5. Enjoy!
