Spicy Strawberry Beet Gazpacho

Prep Time: 15 minutes // Cook Time: 5 minutes Servings: 4-6

What to do

  1. Combine all ingredients in a high speed blender and blend until smooth and creamy.
  2. Chill in refrigerator for at least one hour before serving.
  3. Garnish with a drizzle of coconut milk, fresh herbs and microgreens.

What you’ll Need

2 cups strawberries, diced

1 ¼ cup diced Love Beets Organic Cooked Beets

1 ½ cup cucumber, peeled and diced

1 cup diced tomatoes

½ of a small jalapeño (seeds and pith removed)

2 tbsp freshly squeezed lime juice

1 ½ tbsp apple cider vinegar

½ cup diced shallots, soaked in very hot water for 20 seconds, then drained

½ cup fresh basil

¼ cup fresh mint

1 ½ tsp salt

⅓ cup olive oil

For garnish: coconut milk, fresh herbs, microgreens
