Spinach & Arugula Salad w/ Figs, Golden Beets, and Pecans

What to do

  1. Add all ingredients for the honey cider vinaigrette to a small blender and blend until completely smooth and creamy. Refrigerate until ready to use.
  2. Add the baby spinach and arugula to a large salad bowl. Drizzle desired amount of dressing over the greens and toss until everything is coated in dressing. Arrange the remaining ingredients on top of the salad and serve!

What you’ll Need

Honey Cider Vinaigrette:

1/3 cup avocado oil or olive oil

¼ cup cider vinegar

2 tsp honey

¼ tsp ground cinnamon

¼ tsp ground sea salt

For the Salad:

5 ounces baby spinach

5 ounces baby arugula

1 (6.5-ounce) package Love Beets Honey & Vinegar Golden Beets

8 small ripe figs, halved

1/3 cup raw pecan halves, roasted

¼ cup pumpkin seeds, roasted

1/3 cup feta cheese, optional
