Strawberry Beet Salsa Stuffed Avocados

What to do

  1. In a medium bowl, combine the beets, strawberries, red onion, and cilantro. Drizzle over the olive oil and lime juice and season with salt and black pepper. Toss gently to distribute and taste to adjust for seasonings.
  2. Fill each avocado halve with the salsa and place onto plates or a large serving dish. Garnish each avocado halve with jalapeño or Serrano chiles, crumbled cheese, and a few leaves of cilantro, micro cilantro, or other fresh herbs.
  3. Squeeze avocados with lime and serve immediately. Great enjoyed with chips, if desired!

1½ cups strawberries, diced small

¼ cup red onion, diced small

¼ cup cilantro, chopped

2 tsp extra-virgin olive oil

1 tbsp fresh lime juice, plus extra lime for serving

Salt and pepper

4 avocados, halved and pitted

1 jalapeño or Serrano chile, thinly sliced

¼ cup Cotija or other Mexican style cheese, crumbled

Micro cilantro, as garnish
