What to do
- In a small bowl, whisk together rice vinegar, sesame oil, coconut sugar, lime juice, sriracha and salt.
- In a large mixing bowl, toss all slaw ingredients in dressing until well coated.
- Let sit to infuse flavor for 1 hour (optional).
What you’ll Need
1 package Love Beets Cooked Beets, julienned
1 cup julienned carrots (about 4 large carrots)
¾ cup julienned green apple (peeled and cored)
2 cups thinly sliced purple cabbage (about half a large head)
1/4 cup scallions, sliced thinly
2 tbsp sesame seeds
1 tbsp chopped fresh mint
1 tbsp chopped fresh cilantro
2 tbsp rice vinegar
1/3 cup sesame oil
1 tbsp coconut sugar
1 medium lime, juiced
1 tsp sriracha
3/4 tsp salt
